The GreaseTrooper® GGI, also known as a grease trap, operates on the principle of buoyancy. Animal fats and vegetable oils have a lower density and naturally float on top of water. When wastewater enters a grease interceptor, the flow velocity is reduced, allowing the water to cool and separate into distinct layers. During this process, the grease separates and rises to the top of the interceptor, where it is captured using a series of baffles. Solids settle at the bottom, while clear water exits via an outlet baffle.

To ensure optimal performance of the grease interceptor, it is recommended to install a sample well downstream. This allows for the collection of wastewater samples that can be tested in a laboratory to measure concentration levels of biochemical oxygen demand, total suspended solids, and FOG. These characteristics can determine the grease interceptor’s performance.

Over time, accumulation of solids and grease will inevitably occur. When the grease interceptor reaches its rated maximum capacity, the grease level in the interceptor will increase. When the grease layer reaches 12” thick, an alarm sensor will alert the operator to contact a licensed wastewater disposal company to pump the interceptor.
