I am doing a resturaunt and want your opinions on what would work good and maybe be cheaper. The hand sinks and lavs need to be tempered. I don't know if it would be cheaper to do a 4 gallon under the counter for them or a mixing valve off the 140* water.

Restaurants are large consumers of hot water. For cooking, washing dishes, pot n pans and the floor. 110 degree water is the smallest of needs for washing of hands, but that alone requires a lot more monies to ensure that no one gets scalded. I would opt'd for a thermostatic mixing valve to ensure safety. Battery operated faucets have such a thermo mixing units before each faucet if that is the way you want to proceed. Best Wishes

Low temp dish washers use bleach or chemicals. High Temp dishwashers use 160 degree water for wash and high temp for rinsing. The scrub sinks also require hot water for those pot n pans. And lever handle waste dumps to rid the sinks of that very hot water. Best Wishes
